We add a touch of sugar and let it cool gently. In the meantime, separate the egg whites from the yolks and whisk the latter carefully with three tablespoons of sugar. Mascarpone is the secret ingredient, mixed with eggs at room temperature. The egg whites are whipped until stiff and added to the mascarpone cream to create a light and fluffy texture. Tiramisu is made up of layers of cream and pavesini soaked in coffee, with a final sprinkling of bitter cocoa. Before serving, let it rest in the refrigerator for an even more indulgent experience.
